Gruyère Switzerland AOP Réserve made by Von Mühlenen is a traditional Gruyère. It is ripened for 10 months in climate-controlled cellars and is matured with salty water once a week. This cheese is aged for a longer period, making it spicier than the Classic and its rind is a little darker.
